Pot Roast

Sick of the meal plans at your residence? Just had instant noodle for the 3rd meal in a row? Exhausted your repertoire of pasta recipes? Well, never fear, blogUT is here! Meal Plan is our new column about how to put together easy, breezy, beautiful complete meals. Today’s menu: Pot Roast. Details after the flip.

So a while back, I decided I wanted to try making a roast. I’m a big fan of meat, so I figured a roast would be great, since I can make it once, freeze portions, and just have readily made meat to add to my meals. After looking online at a couple of places, I found this pot roast recipe. It only called for a few ingredients, most of which I had in my kitchen, and it had a lot of positive feedback from people who tried it.

So off I went to European Meats in Kensington to pick up a roast. They had a special on cross rib roast, so I got that. I had a bottle of Cabernet Sauvignon in my cabinet and that’s what I used for the wine. I didn’t have a dutch oven, so I just used a big pot. The preparation didn’t take very long… maybe half an hour max. And after I set it to simmer, I just went to do other stuff and checked on it once in a while. I must say, I was quite impressed with the end result. The meat was very flavourful, considering very little was added in terms of spices. Along with the carrots and some sauce from the roast poured over rice, it made a great meal.

Give it a try. Here’s the link to the recipe again.
